Rocky Road Squares

We’re a little less than six weeks away from Christmas day and I’ve already seen decorations popping up, there’s Christmas music playing in stores, and we’ve even had our first snowfall! In addition, my mom has already been on my case about our stash of Christmas cookies. I’ve chosen to share my favourite Christmas cookie recipes with you as we count down the weeks until Christmas! And this time, I’m making double the amount, just so I had some extra cookies kicking around in case of emergency, and to avoid an incident like last week’s


I’ve heard these treats go by many different names including confetti squares and chocolate marshmallow squares, but I’ve always known this snack by the name of rocky road. Basically it’s the simplest, yet highly sought-after treat in my house. Usually by the time Christmas is over, I’ve made three or four batches of these. As if chocolate and peanut butter wasn’t already the best combination, this treat throws marshmallows into the mix which adds the perfect sweetness to the salty peanut butter.


My family definitely prefers this recipe without nuts but I’ve seen these made with chopped nuts added into the mix. I’ve also seen others top their squares with shredded coconut. I’ve dramatically increased the amount of peanut butter from the amount that my mom would use, so if you’d like to dial it back a little, that’s totally up to you. I’d love to hear about how you mixed this recipe up to suit your taste! One thing I wouldn’t recommend however, is using white mini marshmallows instead of the coloured ones… That would dramatically decrease the fun and hey, we’re trying to make Christmas a more exciting time!

Prep time: 15 minutes



1 ½ cup semisweet chocolate chips

¼ cup butter

½ cup smooth peanut butter

1 package mini marshmallows



1. In a saucepan over low heat, melt butter and chocolate chips. Stir continuously.

2. Once melted, add peanut butter and stir until combined.

3. Remove from heat and allow the mixture to cool for several minutes.

4. Add in package of mini marshmallows and stir until marshmallows are coated in chocolate.

5. Add the mixture into a greased 8x10 dish and spread evenly. Refrigerate for 6 hours, then cut into squares and serve.
